Hearts of Stone endings
Hearts of Stone ends at the Temple of Lilvani with O'Dimm coming for Olgierd's soul. Geralt can only step in if he talked to Professor Shakeslock at the Academy beforehand, which you reach through Shani. Do that and challenge O'Dimm, and a riddle in his world frees Olgierd. Skip the professor or stay out of it, and O'Dimm takes Olgierd's soul and grants Geralt a wish.
Unlocking the wager

The choices
O'Dimm comes for Olgierd
Whatsoever a Man Soweth…At the Temple of Lilvani, when O'Dimm arrives to collect Olgierd's soul.

Geralt offers to play for both their souls. O'Dimm agrees on his own terms and sets a riddle in his world. Solve it and the pact is broken. Olgierd thanks Geralt with his sabre, Iris.

The two endings
Olgierd saved
Whatsoever a Man Soweth…Geralt talked to Professor Shakeslock and chose to help Olgierd.
Geralt took Professor Shakeslock's advice and proposed a wager to Master Mirror. Mirror agreed, but only if it was played out on his terms. He transported Geralt to a strange, dark world and made him solve a riddle. Geralt, who has always had a keen mind for such puzzles, soon found the solution and defeated Gaunter O'Dimm. Was this the last our world will ever see of him? No man can say...
What mattered most at the moment, however, was that Olgierd von Everec was safe, and the pact which had bound him had been dissolved.

O'Dimm takes Olgierd's soul
Whatsoever a Man Soweth…Geralt never met the professor, or chose not to get involved.
Geralt decided not to dispute the arrangement between Gaunter O'Dimm and Olgierd. The pact was fulfilled, and Olgierd's life came to an end.
